Bite or savor? Trends and true case studies, such as Gianvito Fanelli’s “Vita Lenta” project, have highlighted the need and desire to take time for ourselves. Lounging, sunbathing, putting away phones and tasks. And also eating, preferably with others. Slowing down has a revolutionary value. It’s a tribute to the romanticization of simple things, which turn into opportunities for experimentation. Enter the eclectic Trentino chef Davide Zambelli, who brings us into his high-altitude kitchen.

Gianvito Fanelli is a designer, founder, and curator of Vita Lenta, a food writer, communication manager at LOI, and author of the newsletter La Colazione dei Campioni (colazione.email). As a designer, he specializes in branding, content design, and event consulting in both the public and private sectors. He has worked for Tangity, VICE, Elita, Linecheck, and Milano Design Award.

Vita Lenta embodies the sound of cicadas, laundry drying, a person sleeping, watching the sea at sunset, and the pleasure of being bored without guilt. It celebrates humanity and simplicity, appreciating life as it is. It is also an artistic project on Instagram.
